Pancakes are one of the greatest all time breakfast foods. For many, it is a comfort food that brings back fond memories of their childhood and family experiences. But, great pancakes don’t just happen. Pancakes can be a disaster if you don’t take the appropriate steps to cook them properly.
The Secret for Great Pancakes
The first step is making sure the griddle is hot. You can use a frying pan, but the best way to cook a pancake is on a griddle and it needs to be hot. The best way to make sure your griddle is going to be hot enough is to sprinkle a few drops of water on the griddle. If the water beads up and bounces around your griddle is hot and ready.
Next, you need to butter your griddle with real butter for the best results. You can use oil, margarine or a pan spray but butter is the best. Or, you might try (heaven forbid) some bacon grease for a country-style tasting pancake.
Alright, your griddle is hot, buttered and ready to go. So using a bowl with a pour spout, pour your pancake batter unto your hot griddle in one motion until the pancake is about 4 inches in diameter. Don’t stop and start your pouring, it will cause your best griddle pan for pancakes to brown uneven and look funny.
Once you have a griddle filled with pancake batter disks, leave them alone until the tops are covered with bubbles then flip them over. If you rush them, you get mushy or uncooked pancakes. Yuck!

The best way to serve pancakes is to stack them with slabs of butter in between and cover them with maple syrup. Yum, Yum! However, if you are worried about all the sugar try them with some fresh strawberries, blueberries or peaches.
